Crazy Meatball Story

So here's the crazy story: I opened the fridge chopped Bill's few pieces of multigrain homemade sourdough toast saved from Friday. I added chopped onion, eggs, buttermilk, cornmeal, and then I spotted 1/3 of whole wheat not very sweet pumpkin cake I made and I added it.  So meatballs made from ground turkey onion and egg and cornmeal buttermilk, spices, BREADCRUMBS & CAKE!!! We needed to fill out the 3 pounds of lean ground turkey.

We did several taste tests using 2 tablespoons in the microwave for 50 seconds and yummy!! We only needed salt. Bill said, It tastes French Canadian more than Italian. That's fine with us. We added more salt and garlic and it is sooo good. I used a medium 2TB melon scoop and made two trays from 3 pounds of lean turkey. I will freeze them for a rainy day.
