Naked Pizza Pie

Tonight I took 2-3 cups of my  bubbling unfed whole wheat sourdough starter and added some semolina (1/2 cup) and a few TBSP's bread flour and mixed it using my dough hook. I added possibly too much olive oil oregano and basil and black pepper to the dough. (I forgot salt but added it to the top of the pizza later)

I stretched the dough thin in my olive-oiled 12" cast iron pan and then added fresh spinach, fresh mushrooms sliced by hand, sun-dried tomatoes cut with scissors+ seasoned oil from the tomatoes, I sliced green pimento olives, 3 slices of pepper jack cheese cut with scissors. I baked it at 450 F for 10-15 minutes and the crust was crispy and thin and delicious and the toppings were perfect. It was fabulous.

No need for sauce! The pizza was not really naked, it just had no sauce besides olive oil and herbs. I could've added artichoke hearts.
