When staying at a friends house in the 1990's she made this Chinese specialty and it was delicious.
1. Homemade Chili Garlic Oil/Crisp
- Ingredients: 1/2 cup red pepper flakes, 1 tbsp white sesame seeds, 4-5 cloves garlic (minced), 3 green onions (chopped), 1-2 star anise, 1 cinnamon stick, 1 tsp soy sauce, 1 tsp sugar, 1 cup neutral oil.
- Method:
- Infuse: Heat oil in a saucepan with star anise and cinnamon for 5-7 minutes on low to infuse.
- Crisp: Add minced garlic and white parts of green onions; fry until golden brown.
- Sizzle: Remove spices (star anise/cinnamon). Carefully pour the hot oil over a bowl containing the chili flakes, sesame seeds, sugar, salt, and raw green onions.
- Finish: Stir in soy sauce and let cool.
