Applesauce!

We have a bowl full of Jersey Mac's that need to be saved. We bought them from the first apple harvest at THE BIG APPLE in Wrentham 2 weeks ago. I put them in a bowl on display on the table but they over-ripened and now they need saving. The remaining half bushel ones we put in the fridge drawer and they are still fine and crisp. I just chopped the soft ones up and put them in the instant pot pressure cooker with about 4 ounces of water. I am making applesauce.
