Red Kidney Beans

I love kidney beans. If I don't soak them overnight I'll make them the same day way by boiling them for 5 minutes and letting them rest for an hour. Then I'll add olive oil and Adobo seasoning and pressure cook them for 18-30 minutes depending on your preference. I love the gelatinous bean liquid as much as the beans.

I love to add the cooked kidney beans to scrambled eggs. (and eat with homemade kimchi too)

Today for lunch I added some of the cooked kidney beans to canned tuna fish with some chopped red onion. I will repeat this again! The beans were perfect. I used the bean liquid in both instances.
