Chinese Dumplings

I've been wanting to make Chinese dumplings for a few weeks. Tonight I finally did. I added chopped fresh garlic, chopped red bell pepper (for fun) and chopped fresh spinach and a little sesame oil to the ground pork (you could use ground turkey or ground beef or crumbled tofu or  even egg!). Any veggies can work. The trick is to use a tiny amount of filling on each dumpling wrapper and wet your finger tips to seal the folded dumpling skin. Gently fry the dumplings on both sides for about 2 minutes a side then add 1/4 cup of water and cover for a final steaming (2 more minutes). I used a vintage electric frying pan. Then...dip in sriracha + soy sauce! Simple quick and it makes so many. We only made about 8 of them. We'll make more  dumplings tomorrow with the remainder of the filling.
