Sparkling Wine Yeast in Apple Cider

My brother-in-law Marcus has made sparkling apple cider for me for years on Thanksgiving. He gave me a packet of the yeast and now I am trying it. So far it is alive!
I like it because it is very mild and mellow.

Lalvin EC-1118 Wine Yeast produces high alcohol Champagne and Sparkling wines (Up to 18%). It has a strong fermentation and is great for kick starting stuck fermentations.
Ideal Temperature: 50°- 86° F. Expect moderate flocculation.
