All fermented and brined foods taste great to me. I love sourdough, miso, pickles, sauerkraut, olives, kimchee, yogurt, buttermilk, etc. Baking and cooking with alcohol especially beer, wine, in soups and marinades, and brandy-scones are fantastic. "It adds age!" I tell people.
I love aged sharp cheddar, and smoked things too: smoked fish, smoked chicken, smoked sausage, smoked corn and beans.
