Sweet Potato

 I just GRATED a sweet potato (including the skin) into frying pan and it cooked in minutes then I added frozen spinach, olive oil, water, Adobo, 6 eggs beaten, and snips of  fresh front porch basil. I covered it and let it bake 5 minutes. A delicious fast and lazy omelet shared with my husband.
